THE HIGHROLLER LOBSTER CO. STARTED IN 2015 AS TWO GUYS AND A HOT DOG CART.
Andy was working in a local fish market at the time while Baxter was working at a restaurant and on his friends food trucks. The cart set up at Portland breweries like, Bissell Brothers, Oxbow, Austin Street as well as a number of beer-festivals where they met new friends from out of state, and eventually took the show on the road to Trillium, The Veil, Hoof Hearted and lots of others!
THE OG HR HQ
After three years of the mobile circuit, the boys teamed up with Pete from Bissell Brothers and decided to give HR an HQ. In December of 2018 the three changed the world of lobster rolls in Portland, Maine by opening up a brick and mortar at 104 Exchange Street. This little shop showcased all of the favorites of the cart and allowed for an expansion of the menu with things like burgers, fries and corndogs. This shop also gave the team the opportunity to bring some of the beer discovered in their travels back to their hometown!
People came from all over the world to eat lobster rolls and drink beer!
So many people came that the restaurant got bigger! Summer of 2019 marked the official launch of Highroller 2.0 which still serves all the great food and drink but now has a full gift shop and the added luxury of a spacious and secluded patio!
